Welcome to One Dish Vegetarian

For years I have had the same reaction when looking at vegetarian recipes.

So many of them are side dishes. Salads, small plates, accompaniments. But where is the entrée? The dish that actually satisfies you as a meal.

That question eventually became an idea.

One Dish Vegetarian is about creating complete vegetarian meals that stand on their own. A single dish that provides balance, nourishment, and real satisfaction.

My cooking comes from two places.

The first is my Indian heritage, where vegetarian cooking has always been rich, thoughtful, and deeply satisfying.

The second is more than three decades living in San Francisco, surrounded by one of the most vibrant food cultures in the world. Farmers markets, restaurants, cooking classes, and chefs constantly offered new inspiration.

Over time those influences blended naturally in my kitchen.

Instead of planning complicated menus, I began focusing on a single dish that contains everything you need: vegetables, protein, grains or legumes, healthy fats, and bold flavor.

A dish that feels complete.

In this newsletter I will share ideas, techniques, flavor combinations, and occasional recipes inspired by that approach.

The goal is simple.

One satisfying vegetarian dish.
