Hi!
If you’re new here, welcome. I’m so glad you’re here!
I share simple ways to think about building vegetarian meals so they feel complete, satisfying, and actually work in real life.
A lot of people think the key question is: vegetarian or vegan?
But that’s not why your meals feel incomplete.
You can follow either approach and still end up with meals that:
Don’t feel satisfying
Leave you hungry
Feel like a collection of sides instead of a real meal
Because the real issue isn’t the label.
It’s how the meal is put together.
A Simple Way to Fix This
Here’s one thing you can try the next time you cook:
Before you start, ask yourself: What is the base of this meal?
If you don’t have one, that’s often why the meal feels incomplete. A base could be:
Rice
Pasta
Polenta
Flatbread, naan or lavash (I love Atoria’s)
Quinoa or another grain
It doesn’t have to be complicated. But having something grounding changes how the whole meal feels. It turns a collection of ingredients into something that feels like a real dish.
Try This Tonight
Take something simple you already make. Maybe it’s sautéed vegetables or a bean dish. Instead of eating it on its own, serve it over:
Rice
Polenta
Pasta
Flatbread, naan or lavash
Notice the difference. Same ingredients. Different experience.

“We didn’t have a lot to work with to make dinner tonight and I dreaded the idea of doing a grocery run. Then I remembered Vandana’s guide and started flipping through it for inspiration.
An hour later, we had a delicious meal that followed her philosophy for composing a complete vegetarian meal. We used a spice profile in one of her recipes for inspiration and then put the rest together from what we had on hand: a bunch of broccolini, a can of garbanzo beans, onion, Parmesan, a gluten-free bow-tie pasta and a nice wine.
It was magic! So delicious and easy and fast.
The guide is empowering. It tapped into a cooking creativity I didn’t know I had.
And now I’m looking forward to seeing what I can cook up next. I can’t overemphasize how good it was.
